Calling all Cheesecake lovers! Lemony, creamy cheesecake, cooked in less than 30 minutes, is just the ticket for a dessert that pleases almost everyone!
If you thought that Pressure Cookers were only good for ribs and pulled pork, which are incredibly good too, think again. Pressure cookers will take the time and aggravation out of recipes traditionally cooked in a water-bath. Cheesecakes, steamed puddings and apple dumplings are all great pressure-cooked desserts.
All you need to make this cheesecake is a 6qt minimum-sized pressure cooker, a 7″ springform pan and a cooking rack. I have to say though, that I had a heck of a time finding a 7″ springform pan (most at 9″) that would fit into my cooker and the rack was no easy find either. After traveling to 5 stores, I ended up finding exactly what I needed on line. I’ll post the items for you.
It also took me 3 tries before I was happy with the outcome. This was due mostly to timing issues caused by the difference between the psi of my pressure cooker versus the psi of the cookers written by authors of the recipes I was learning from.
What is PSI? The pressure inside of a Pressure Cooker is measured in PSI (pounds per square inch). Depending on the type of cooker you have, the pressure may be preset for you, you may have a choice between “low” and “high” pressure or you may even be able to choose between the exact pounds of pressure that you want. Being able to choose your psi is a great feature for avid canners and pressure cooker users because you can have a greater degree of accuracy and, thus, success. If you do not have the choice of adjusting the psi, your only option is to adjust your cooking times. The lower the psi, the more cooking time is required.
