If you only have 40 minutes and frozen ground beef but need to make a quick dinner, pull out your pressure cooker! Add chopped onion, penne and a jar of spaghetti sauce and you’ll get dinner on the table super quick!
What if you are really running late and only have 10 minutes? There’s help for you too! Just thaw the meat first, in the microwave if you like, and then cook together at the same time…in just 10 minutes cooking time after pressure is reached.
Here’s what you need:
1 lb lean ground beef; frozen or thawed
1 24-oz jar of your favorite spaghetti sauce; I like roasted garlic flavor
1 medium onion; chopped
1 Tbs. Italian seasoning, optional
2 1/4 Cups water
1 lb. dry Penne pasta
2 C Shredded Mozzarella Cheese, optional
Plug in your electric pressure cooker and set the cook time for 20 minutes, or heat stovetop models over medium-high heat.
Pour in the spaghetti sauce, set the meat in the center, add the chopped onion and a little extra seasoning if desired. Secure the lid and cook the 20 minutes.
When cooking time has elapsed, quickly release the pressure.
Use a spatula or wooden spoon to “chop” the meat into bite-sized pieces. Stir in 2 1/2 cups of water and the dried pasta and re-secure the lid. Set the cooking time for 9 minutes on your electric cooker or bring your stove top model to full pressure, reduce heat and cook 9 minutes.
Release the pressure and open the lid. Stir in the 2 cups of mozzarella cheese (optional) and serve. Pretty quick and pretty good!
Don’t even have 40 minutes?? Make it in 9!
If you need dinner even sooner, use thawed meat; fresh or defrost from frozen in the microwave for 4 minutes. Preheat set the cooking time on your electric pressure cooker to 9 minutes and press start; or preheat your stovetop model as directed above. Add 1 Tbs. Olive Oil and brown the meat, along with the onions, for 5 minutes or until mostly cooked. Add the remaining ingredients, including the pasta and proceed as directed above. Now that’s a fast dinner!
